The totals below include both the beef and the processing, so the number you see is the number you pay — there is no separate locker bill waiting at pickup. Custom cuts are available on quarters and halves. If there's a cut your family won't eat, we'll swap it for more ground beef.

The Eighth of Beef

Perfect for a smaller freezer. The package includes steaks, roasts, patties, and ground beef. It can't be custom cut the way quarters and halves can, but it's a good sample if you're looking for something smaller.

An eighth is a mixed quarter of beef split in half. The locker cuts the chuck, arm, rump, and sirloin tip roasts; the T-bone, porterhouse, ribeye, and sirloin steaks; beef patties (5 lbs per eighth); and ground beef in 1 lb packages.

Price includes beef (hanging weight) and processing. Most eighths range from 75–115 lbs hanging weight. Available in standard cut only.

How Bulk Beef Pricing by Hanging Weight Actually Works

Hanging weight is the weight of the carcass at the USDA-inspected locker after slaughter, before it's cut and packaged. We charge $6.99 per pound of that hanging weight for the beef, plus $1.90 per pound for the locker to cut, wrap, and freeze it. Both numbers are on this page, so you know the total before you order. What lands in your freezer weighs less than the hanging weight — expect to lose another 25–40% in trimming, deboning, and moisture loss. A 220 lb hanging-weight quarter typically yields roughly 130–165 lbs of packaged meat.

  • The total you see is the total you pay. No separate locker bill waiting at pickup.
  • Take-home weight is lower than hanging weight. That's normal, and it's true of every farm and locker.
  • Per finished pound, a quarter works out to roughly $12 to $15 — and that average includes the ribeyes, T-bones, and brisket, not just ground beef.
  • All charges are based on the official hanging weight recorded by the USDA-inspected locker, not our estimate.

Why Every Price on This Page Already Includes Processing

Every individual cut listed on this page — every steak, chop, brat, and pound of ground beef — is priced with processing included. The number next to the product is what you pay for a packaged, frozen, ready-to-cook cut. Bulk beef and bulk pork are the only items priced in two parts, and that's because the final weight isn't known until the animal is at the locker. We list both halves of that math above so there's no surprise.

  • Individual cuts: one price, processing included, no math.
  • Bulk beef and pork: hanging-weight rate plus a processing rate, both published above.
  • Custom cuts are available on quarters, halves, and whole beef, and on custom-cut hogs. Eighths are standard cut only.
  • Swaps are fine. If your family won't eat a cut, we'll put that weight into ground beef instead.

What Should You Order First If You Have Never Bought Bulk?

Start with the size your freezer can actually hold. An eighth of beef runs $666.75 to $1,022.35 and fits in about two cubic feet — a good first order if you've never bought this way. A quarter runs $1,333.50 to $1,955.80, needs four to five cubic feet, and is what most families around Morton and Peoria settle into buying once a year. Hanging weight is the carcass weight recorded at the USDA-inspected locker after slaughter and before cutting. Bulk beef is priced that way because it's the only weight that's known and verified at the time of processing. You pay $6.99 per pound of hanging weight for the beef plus $1.90 per pound for processing, and you take home roughly 60–75% of that hanging weight in packaged meat.

How much does a quarter of beef cost at Little Blue's Farm?

A quarter of beef runs $1,333.50 for a 150 lb hanging weight up to $1,955.80 for a 220 lb hanging weight, and those totals include both the beef and the processing. Most quarters fall in the 150–220 lb range. Custom cuts are available on quarters at no extra charge.

Are these prices before or after processing?

Every individual cut price on this page includes processing — the price you see is the price for a packaged, frozen cut. Bulk beef and bulk pork are the only items priced in two parts, hanging weight plus processing, and both totals are shown together in the tables above.

What is the difference between standard cut and custom cut?

Standard cut means we pick the cuts and packaging sizes for you, based on what most families ask for. It's faster and you skip the locker coordination. Custom cut means you tell the butcher exactly how thick you want steaks, what size roasts, and how the ground beef is packaged. Custom cut takes longer and requires working directly with the locker. Eighths are standard cut only.

What is in an eighth of beef and can I customize it?

An eighth is a mixed quarter split in half. How much freezer space does a quarter of beef take up?

Plan on about 1 cubic foot of freezer space for every 35–40 lbs of packaged meat. A quarter fits in roughly 4 to 5 cubic feet and most standard chest freezers handle it without a problem. An eighth needs about 2 cubic feet. A half needs closer to 8 to 10.

Is your beef grass-fed or grain-fed?

Both are available — you pick. Grass-fed cattle eat pasture and forage their whole lives. Grain-finished cattle eat grass, then grain for the last several months, which adds marbling and a milder flavor. Either way the beef is dry-aged and raised without added hormones, without steroids, and without daily antibiotics.
